ALCOHOL FERMENTATION

The alcoholic fermentation lasts between 16 to 25 days at 16-18 ºC and takes place in French oak barrels. Once this process has concluded, the wine is left on light lees fermentation stirring twice a week to obtain an adequate manoprotein extraction. A 35% of the wine has Malolactic fermentation process.

COLOUR

Lively brilliant yellow with golden tones

 

AROMA

Intense and complex, with a touch of tropical notes like papaya or mango. Hints of cloves, butterscotch and dry herbs

 

PALATE

Dense, mineral with a great balanced and a fantastic aftertaste. Accompanies (food) Goes well with Sea food, creamy sauces, some kinds of pastas or white meats

 

FOOD PAIRINGS

Sea food, pastas, white meats and mild cheese

 

CELLARING POTENTIAL
