ALCOHOL FERMENTATION |
The alcoholic fermentation lasts between 16 to 25 days at 16-18 ºC and takes place in French oak barrels. Once this process has concluded, the wine is left on light lees fermentation stirring twice a week to obtain an adequate manoprotein extraction. A 35% of the wine has Malolactic fermentation process. |
