Gran Reserva wines are fermented in small batches, separated by grape variety and lot, picking date and pressing. Each batch is individually selected and managed in order to avoid any risks during the process. All the wine is aged in French oak, half in first-use barrels for a period of 8 months, and the other half in second-use barrels for 10 to 12 months. The bottle-aging process takes another 6 to 8 months, depending on the wine, in temperature-controlled cellars. Wine and cork evolution is monitored periodically.
Two thirds of the Reserve wines are left to rest in French oak barrels for at least 6 months, and the remaining one third in American oak barrels. The barrels may be brand new or one year old. The wine is then racked into stainless steel tanks and clarified one month prior to bottling.
Chardonnay Reserve wines are fermented and aged on their lees for 4 to 6 months to allow the noble wood to deliver its complex notes while preserving the character of the original fruit.
